40gr pane grattugiato bi aglut<br />
frullo tutto nel mixer fino a che si formi un impasto liscio, pongo la palla nel frigo per un paio d'ore e dopodiche' formo gli hamburger che cuocero' in padella con un filino d'olio giusto il tempo per scaldarli e fare formare la pellicola croccantina.<br />

mixare lo zucchero con il burro poi aggiungere gli altri ingredienti ...se l'impasto e' troppo morbido aggiungere la farina un po alla volta...dopodiche formare i bigolini dopo avere passato l'impasto in frigo una mezz'oretta. Una volta che si è data la forma ai cacchini ripassarli in firgo per minimo altri 30 minuti devono essere belli sodi come quando fa male mentre esce ( ahahahahahahahahah) ...a parte gli scherzi questo passaggio è importante perche serve a fare mantenere la forma se no vi verranno come questi</div>

Passare i tuorli sodi nel setaccio dalla maglia stretta (tipo quello per spolverizzare lo zucchero a velo) cosi da ottenere una polvere sottile d'uovo,mischiarla al burro morbido e allo zucchero,in ultimo aggiungere la farina. Mettere il composto una mezz'ora in frigo avvolto nella pellicola trasparente. Dopodichè stendere la pasta lasciando uno spessore di circa 3mm e comporre i fiori. Tra uno strato e l'altro per farli attaccare meglio spennellare la marmellata non solo nel buchetto. Passare i biscotti in frigo per 10 minuti per gli fissare la forma, poi cuocere in forno a 160° per 10/15 minuti circa. una volta freddi spolverizzare con zucchero a velo.</div>

dopo avere tolto il picciolo alle fragole lavarle accuratamente poi spezzettarle grossolanamente e porle nel tegame insieme allo zucchero. Alcune ricette dicono di aggiungere acqua ma io ho notato che anche se non la metto va benissimo ugualmente perche dopo un inizio in cui sembra che possa servire,lo zucchero si sciogliera' e la frutta fara' la sua acqua da sola. lasciare cuocere almeno un ora e mezzo, a fuoco moderato, mescolando ogni tanto. La cottura sara ultimata quando la marmellata avra' preso la consistenza giusta e la consistenza giusta la si ha quando una goccia di marmellata su un cucchiaino cola molto lentamente. Se vi semvra troppo liquida lasciarla cuocere ancora un po,magari aggiungendo ancora un po di zucchero,se invece vi si è cristallizzata troppo aggiungere un po d'acqua e lasciarla cuocere ancora un po a fuoco basso....</div>

<span style="font-size: large;">Versare il burro ,l'acqua e il sale in un tegame e porre sul fuoco.Non deve bollire mi raccomando! una volta che si e' sciolto il burro e scaldato il tutto tolgo dal fuoco e aggiungo la farina,mescolo fino ad ottenere un impasto compatto,lascio intiepidire poi aggiungo le uova.Frullo tutto con il mixer per rendere l'impasto omogeneo e liscio poi aggiungo il lievito.Con l'impasto ottenuto formo delle palline aiutandomi con due cucchiaini o con il sac a poche, le pongo distanziate sulla placca da forno foderata con carta da forno ( se l'impasto è particolarmente molle posso mettere le palline in dei mini pirottini in modo che non si spatascino tutte :) ).Inforno a 180° per 30 minuti circa....dipende dal vostro forno io con il mio ho messo 160° per 20 minuti ad esempio</span></div>

poi ripiego il lato inferiore all'insu fino a meta e ci sovrappongo il lato superiore,giro con l'apertura a sinistra e ristendo....(sempre insenso verticale,mai orrizzontalmente) questi sono i giri e ad ogni giro gli faccio un passaggio di mezz'ora nel frigo,per almeno 6 giro.Dopodiche posso stendere del tutto e sbizzarrirmi con le forme</div>

120gr ricotta (oppure patata bollita,ma con la ricotta sono piu delicate)</div>

faccio sciogliere il lievito nel latte ed attendo finche non si forma la schiumetta, poi lo unisco agli ingredienti e amalgamo ilt utto con le fruste.L'impasto risultera' molle e lo pongo a lievitare vicino ad una fonte di calore per almeno un ora e mezzo, deve raddoppiare di volume. Dopodichè colarlo nell'olio bollente aiutandosi con il sac a poche e friggere da entrambi i lati,scolare ben benino e poi arrotolarne nello zucchero semolato.</div>

Ho sfumato sedano carote e cipolla con un pochino di vino bianco e olio per poi cuocerci dentro il risotto con il brodo.a fine cottura ho aggiunto un po di parmigiano,burro e pochino pochino di panna</div>

Per fare la cialda basta mettere il parmigiano in una padella antiaderente e lasciarlo cuocere pochi minuti vedrete che si unifichera'... dopodiche' lo stacco con una leccarda e lo pongo su un piatto o tazza per dargli la forma, si secchera' nel giro di pochi minuti</div>

Questa e' la cialda rimasta impregnata del saporino del riso, se non l'avrete cotto troppo si potra' mangiare tranquillamente,altrimenti piu' cuoce il parmigiano e piu' diventa saporito e immangiabile...</div>
